Crispy Buffalo Tofu Nuggets

1 block (14 oz) firm tofu, drained and pressed

1 cup all-purpose flour (or gluten-free flour)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1 cup unsweetened almond milk (or any plant-based milk)

1 cup panko breadcrumbs

1/2 cup buffalo sauce (store-bought or homemade)

2 tbsp olive oil (for drizzling)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes or nuggets. Make sure they are uniform in size for even cooking.

    Set Up Breading Station: In three separate bowls, prepare your breading station:

      - Bowl 1: Combine flour, garlic powder, onion powder, smoked paprika, salt, and pepper.

        - Bowl 2: Pour in the almond milk.

          - Bowl 3: Place the panko breadcrumbs.

            Bread the Tofu:

              - Take a tofu nugget and coat it in the flour mixture, ensuring it's well coated.

                - Dip it into the almond milk, letting any excess drip off.

                  - Next, roll it in the panko breadcrumbs, pressing gently to adhere.

                    Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

                      Arrange and Drizzle: Place the breaded tofu nuggets on the prepared baking sheet. Drizzle olive oil over the nuggets to help them crisp up in the oven.

                        Bake: Bake the nuggets in the preheated oven for 25-30 minutes, flipping them halfway through until they are golden brown and crispy.

                          Toss in Buffalo Sauce: Once baked, remove the nuggets from the oven and place them in a large bowl. Pour the buffalo sauce over the nuggets and toss gently to coat.

                            Serve: Serve the crispy buffalo tofu nuggets hot with your favorite dipping sauces like ranch or blue cheese dressing and celery sticks on the side.
