Ingredients

1 medium head of cauliflower, cut into small florets

1 cup all-purpose flour (or your choice of gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for heat preference)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup buttermilk (or plant-based milk with 1 tablespoon vinegar)

1 cup panko breadcrumbs

1 cup BBQ sauce (your favorite variety)

8 small corn or flour tortillas

1 cup red cabbage, finely shredded

1 ripe avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Cauliflower: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Toss in the cauliflower florets, ensuring they’re coated evenly.

Coat with Buttermilk: Pour the buttermilk over the seasoned cauliflower and stir until all pieces are well coated.

Breadcrumb Coating: Place the panko breadcrumbs in a shallow dish. Using a slotted spoon, remove the cauliflower from the buttermilk, allowing excess liquid to drip off, then transfer each piece into the panko breadcrumbs. Coat the cauliflower thoroughly, pressing down gently to adhere the breadcrumbs.

Bake the Cauliflower: Arrange the coated cauliflower florets on the prepared baking sheet in a single layer. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy, flipping halfway through for even crispiness.

Add BBQ Sauce: Once the cauliflower is crispy, remove it from the oven and drizzle or toss the florets in BBQ sauce to coat them lightly.

Warm the Tortillas: While the cauliflower is baking, warm the tortillas in a skillet over low heat for about 30 seconds on each side, or until pliable.

Assemble the Tacos: To assemble, place a generous portion of the crispy BBQ cauliflower in the center of each tortilla. Top with shredded red cabbage and a few slices of avocado. Drizzle additional BBQ sauce if desired.

Garnish and Serve: Finish with fresh cilantro and serve with lime wedges on the side for squeezing over the tacos.
