1 lb Brussels sprouts, trimmed and halved

6 slices of thick-cut bacon, diced

3 tablespoons balsamic vinegar

2 tablespoons olive oil

2 tablespoons honey

3 cloves garlic, minced

Salt and black pepper, to taste

1/4 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish

Preheat Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Cook Bacon: In a skillet over medium heat, cook the diced bacon until crispy, about 6-8 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess fat, reserving about 1 tablespoon of bacon drippings in the skillet.

      Prepare Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with the reserved bacon drippings, olive oil, balsamic vinegar, honey, minced garlic, salt, pepper, and red pepper flakes. Toss everything together until the Brussels sprouts are well coated.

        Spread on Baking Sheet: Spread the Brussels sprouts mixture in a single layer on the prepared baking sheet. Make sure the cut sides are facing down for optimal crispiness.

          Roasting Time: Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the Brussels sprouts are golden brown and crispy.

            Add Bacon: With about 5 minutes left of roasting, sprinkle the crispy bacon on top of the Brussels sprouts for the last bit of cooking.

              Garnish and Serve: Once roasted, remove the baking sheet from the oven. If using, sprinkle the grated Parmesan cheese over the hot Brussels sprouts. Add fresh parsley for garnish and serve immediately.
