Ingredients

1 jar (24 oz) dill pickles, sliced into 1/4-inch rounds

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for drizzling

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare Pickles: Drain the dill pickle slices and pat them dry with paper towels. This helps ensure they become crispy during baking.

Set Up Breading Station: In three separate shallow dishes, prepare your coating stations:

        - In the first dish, add flour mixed with a pinch of salt and pepper.

          - In the second dish, whisk the eggs until well beaten.

            - In the third dish, combine the panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.

Coat the Pickles: Working in batches, dip each pickle slice first in flour, ensuring it's coated evenly, then into the beaten eggs, allowing the excess to drip off, and finally into the breadcrumb mixture, pressing lightly to adhere the crumbs well.

Arrange on Baking Sheet: Place the coated pickle chips in a single layer on the prepared baking sheet, making sure they don’t touch. Lightly spray or drizzle with olive oil for extra crispiness.

Bake: Bake in the preheated oven for 15-20 minutes, flipping halfway through, until golden brown and crispy.

Serve: Remove the pickle chips from the oven and let them cool slightly. Serve warm with your favorite dipping sauce, like ranch or aioli.
