Crispy Baked Chicken Tenders with Honey Mustard

1 pound chicken tenders

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1 tablespoon olive oil

Cooking spray

For the Honey Mustard Sauce:

1/2 cup mayonnaise

1/4 cup honey

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

Prepare the Chicken Tenders:

    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray it with cooking spray.

      Set Up the Dredging Stations:

        In three separate shallow bowls, set up the breading station. In the first bowl, add the all-purpose flour, garlic powder, onion powder, paprika, salt, and pepper. In the second bowl, whisk the eggs until beaten. In the third bowl, add the panko breadcrumbs and drizzle with olive oil. Mix until the breadcrumbs are lightly coated and set aside.

          Bread the Chicken Tenders:

            Working with one chicken tender at a time, first dredge it in the seasoned flour, shaking off any excess. Next, dip it into the beaten eggs, letting any excess drip off, and finally coat it generously with the panko mixture, pressing gently to adhere. Place the breaded tender on the prepared baking sheet. Repeat with all chicken tenders.

              Bake the Chicken Tenders:

                Once all the tenders are on the baking sheet, lightly spray them with cooking spray (this will help with browning). Bake in the preheated oven for 15-20 minutes, or until they are golden brown and crispy, flipping them halfway through the cooking time for even crispiness.

                  Make the Honey Mustard Sauce:

                    While the chicken is baking, prepare the honey mustard sauce. In a bowl, whisk together the mayonnaise, honey, Dijon mustard, apple cider vinegar, and a pinch of salt and pepper. Adjust to your taste.

                      Serve and Enjoy:
