Crispy Baked Chicken Taquitos

2 cups cooked shredded chicken (preferably rotisserie)

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1/2 cup black beans, drained and rinsed

1/2 cup corn (fresh, frozen, or canned)

1/4 cup fresh cilantro, chopped

2 tbsp taco seasoning (store-bought or homemade)

1/2 tsp garlic powder

1/2 tsp onion powder

Juice of 1 lime

12 small flour or corn tortillas

Olive oil or cooking spray, for greasing

Optional toppings: salsa, avocado, sour cream, or guacamole

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with olive oil or cooking spray.

    Prepare the Filling: In a large mixing bowl, combine the cooked shredded chicken, shredded cheese, black beans, corn, cilantro, taco seasoning, garlic powder, onion powder, and lime juice. Mix well until all ingredients are evenly combined.

      Warm the Tortillas: To make them pliable, heat the tortillas. You can do this using a microwave—place a damp paper towel around a stack of tortillas and microwave for 30-45 seconds, or warm them individually in a dry skillet over medium heat for 30 seconds on each side.

        Fill the Tortillas: Take one warm tortilla and spoon about 2-3 tablespoons of the chicken filling onto the lower third of the tortilla. Roll the tortilla tightly around the filling, placing seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.

          Brush with Olive Oil: Lightly brush the tops of the rolled taquitos with olive oil or spray them with cooking spray to help them crisp up in the oven.

            Bake the Taquitos: Bake in the preheated oven for 15-20 minutes, or until the tortillas are golden brown and crispy. For extra crispiness, you can turn them halfway through the baking time.

              Serve: Allow the taquitos to cool for a minute before serving. Enjoy them with your favorite toppings such as salsa, avocado, sour cream, or guacamole!
