2 medium zucchini, cut into fries (about 4-5 inches long)

1 cup almond flour (or any preferred flour)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs, beaten

Cooking spray or olive oil spray for crisping

Optional: fresh herbs for garnish (parsley or basil)

Prepare the Zucchini: Trim the ends of the zucchini and cut each zucchini in half. Then, cut each half into uniform fry shapes about 1/4 inch thick. Pat them dry with a paper towel to remove excess moisture.

    Set Up Dredging Station: In one shallow bowl, combine almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, dried oregano, salt, and black pepper. Mix well to combine.

      Prepare Egg Wash: In another shallow bowl, beat the eggs until well mixed.

        Coat the Zucchini Fries: Dip each zucchini fry first into the egg wash, allowing excess to drip off, then coat it thoroughly with the flour and Parmesan mixture. Press gently to ensure the coating sticks well. Place the coated fries on a plate or a baking sheet lined with parchment paper.

          Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

            Arrange in Air Fryer: Spray the basket of the air fryer lightly with cooking spray. Arrange the zucchini fries in a single layer, making sure they do not overlap. You may need to do this in batches depending on the size of your air fryer.
