Crispy Air Fryer Taco-Stuffed Mini Peppers

12 mini sweet peppers

1 pound ground turkey (or beef)

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

1 cup canned black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup shredded cheddar cheese

½ cup salsa

2 tablespoons olive oil

Fresh cilantro, for garnish

Sour cream, for serving (optional)

Lime wedges, for serving (optional)

Instructions
 

Preparation of Peppers: Preheat your air fryer to 375°F (190°C). While preheating, wash the mini peppers and slice them in half lengthwise. Remove the seeds and membranes, and set aside.

    Cook the Meat: In a skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 2-3 minutes until translucent. Add in the minced garlic and cook for an additional minute until fragrant. Next, add the ground turkey or beef, breaking it up with a spatula. Cook until browned and fully cooked, about 5-7 minutes.

      Combine Ingredients: Stir in the taco seasoning, black beans, corn, and salsa. Cook for 3-5 minutes until everything is well combined and heated through. Remove from heat and mix in half of the shredded cheddar cheese.

        Stuff the Peppers: Carefully spoon the taco mixture into each mini pepper half, packing them generously but not overstuffing.

          Air Fry the Peppers: Arrange the stuffed mini peppers in a single layer in the air fryer basket (you may need to do this in batches). Lightly spray with cooking spray. Air fry for 8-10 minutes, or until the peppers are tender and the tops are crispy.

            Add Remaining Cheese: In the last 2 minutes of cooking, sprinkle the remaining cheddar cheese over the stuffed peppers and continue air frying until the cheese is melted and bubbly.

              Serve: Once done, carefully remove the peppers from the air fryer. Garnish with fresh cilantro and serve with lime wedges and sour cream on the side if desired.
