8 oz (225 g) pasta of choice (fettuccine, penne, or spaghetti)

2 medium zucchinis, diced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 cup heavy cream (or coconut cream for a dairy-free option)

1 cup grated Parmesan cheese (or nutritional yeast for vegan)

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish

Optional: crushed red pepper flakes for heat

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Vegetables: In a large skillet or pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the diced zucchini and cook for 4-5 minutes until they are tender and slightly golden.

      Add Tomatoes: Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they start to soften. Season with salt, pepper, dried basil, and oregano.

        Create the Creamy Sauce: Pour the heavy cream into the skillet, stirring to combine. Allow the mixture to simmer for 2-3 minutes, letting it thicken slightly.

          Incorporate Cheese: Gradually add the grated Parmesan cheese, stirring until it melts and creates a creamy consistency. If the sauce is too thick, add a bit of the reserved pasta water until desired creaminess is achieved.
