4 cups watermelon, cubed and seeded

1/2 cup feta cheese, crumbled

1/2 cup Greek yogurt

1/4 cup honey or agave syrup

Juice of 1 lime

Zest of 1 lime

Fresh mint leaves for garnish (optional)

Prepare Watermelon: Place the cubed watermelon in a blender or food processor. Blend on high until smooth, ensuring there are no chunks remaining. If you prefer a little texture, you can blend it less.

    Mix Creamy Base: In a separate bowl, combine the crumbled feta cheese, Greek yogurt, honey, lime juice, and lime zest. Mix well until smooth and all ingredients are fully incorporated. This mixture should be creamy and have a nice balance of sweet and savory.

      Layer the Pops: In your popsicle molds, pour a layer of the watermelon puree (about halfway full). Then, spoon in a layer of the creamy feta mixture on top of the watermelon. You can use a small spatula or toothpick to swirl them together lightly if desired for a marbled effect.

        Repeat Layers: Add another layer of watermelon puree on top of the creamy layer, leaving a small gap at the top of the molds for the pops to expand when they freeze.

          Insert Sticks: Carefully insert popsicle sticks into the molds, making sure they stand upright and are centered in the mixture.

            Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until completely solid.

              Unmold and Serve: To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds; this helps to loosen them. Gently pull on the sticks to release the pops.

                Garnish and Enjoy: Optionally, you can garnish each popsicle with fresh mint leaves before serving for a refreshing touch.
