12 oz fettuccine or linguine

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

½ cup grated Parmesan cheese

½ teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish (optional)

Cook the Pasta: Begin by boiling a large pot of salted water. Cook the fettuccine or linguine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Prepare the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the shrimp with salt and pepper. Add the shrimp to the skillet and sauté until pink and opaque, about 2-3 minutes per side. Remove the shrimp and set aside.

      Sauté Garlic and Veggies: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for 30 seconds until fragrant. Then, add the cherry tomatoes and stir for a couple of minutes until they start to soften.

        Make the Sauce: Lower the heat and pour in the heavy cream. Stir until well combined, then sprinkle in the Italian seasoning, adding salt and pepper to taste. Let it simmer gently for 2-3 minutes until the sauce thickens slightly.

          Combine Ingredients: Add the fresh spinach to the sauce and stir until wilted. Then, return the shrimp to the skillet, followed by the cooked pasta. Toss everything together, adding reserved pasta water as needed to reach the desired creamy consistency.

            Finish with Cheese: Remove from heat and stir in the grated Parmesan cheese until well incorporated. Taste and adjust seasoning if needed.
