Creamy Tuscan Salmon with Spinach

4 salmon fillets (6 oz each)

2 tablespoons olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Juice of 1 lemon

Fresh basil, for garnish (optional)

Instructions
 

Prep the Salmon: Season the salmon fillets with salt and pepper on both sides.

    Sear the Salmon: In a large skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes, then carefully flip and cook for another 3-4 minutes until the salmon is golden and cooked to your liking. Remove from skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.

        Add Spinach: Stir in the chopped spinach and cook until wilted, about 2 minutes.

          Make the Cream Sauce: Lower the heat to medium and pour in the heavy cream. Stir well to combine and bring it to a gentle simmer.

            Add Flavor: Mix in the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is creamy. Taste and adjust seasoning if necessary, then squeeze the lemon juice into the sauce.
