1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

1 rib celery, diced

4 cups vegetable or chicken broth

1 can (14 oz) diced tomatoes, undrained

1 cup heavy cream

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (adjust to taste)

1 package (9 oz) fresh cheese ravioli (or your favorite frozen variety)

2 cups fresh spinach, chopped

Salt and pepper to taste

Fresh basil, for garnish

Grated Parmesan cheese, for serving

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, diced carrots, and celery; cook for an additional 3-4 minutes until the vegetables are tender.

    Add Broth and Tomatoes: Pour in the vegetable or chicken broth along with the can of diced tomatoes (including juices). Stir to combine, and bring to a gentle boil.

      Season the Soup: Once boiling, reduce the heat to low. Add the heavy cream, Italian seasoning, and red pepper flakes. Stir well and let simmer for about 5 minutes to allow the flavors to meld.

        Cook the Ravioli: Carefully add the fresh ravioli to the pot. Cook according to package instructions, usually about 3-5 minutes, until the ravioli are tender and floating.

          Add Spinach: Stir in the chopped spinach and cook for an additional 2 minutes until wilted. Taste the soup and season with salt and pepper as needed.
