8 oz (225 g) pasta (penne or fettuccine works well)

2 tbsp olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juice)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1 cup fresh basil leaves, roughly chopped

Fresh basil leaves for garnish

Additional grated Parmesan for serving

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant (be careful not to burn).

      Add Tomatoes: Pour in the can of diced tomatoes (with their juice) and stir to combine. Let the mixture simmer for about 3-5 minutes, allowing it to thicken slightly.

        Make the Sauce: Lower the heat and stir in the heavy cream. Mix well and bring it to a gentle simmer. Add in the grated Parmesan cheese, stirring until melted and the sauce is creamy.

          Season the Sauce: Sprinkle in the red pepper flakes (if using), and season with salt and pepper to taste.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat it evenly with the sauce. If the sauce is too thick, gradually add the reserved pasta water until you reach the desired consistency.
