8 oz (about 225g) pasta of your choice (penne or fettuccine work great)

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1 cup heavy cream

1 cup fresh basil leaves, chopped (plus extra for garnish)

1/2 cup grated Parmesan cheese

2 tbsp olive oil

Salt and pepper, to taste

Red pepper flakes (optional, for a kick)

Boil the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

    Sauté the tomatoes: In a large skillet over medium heat, add the olive oil. Once hot, toss in the halved cherry tomatoes and sauté for about 3-4 minutes, or until they start to blister and soften.

      Add garlic: Stir in the minced garlic and cook for an additional minute until fragrant.

        Create the creamy sauce: Lower the heat to medium-low. Pour in the heavy cream and stir well, allowing it to simmer for about 2 minutes until slightly thickened.
