Ingredients

12 oz pasta (penne or fusilli works great)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup fresh basil leaves, chopped

½ cup grated Parmesan cheese

Optional: crushed red pepper flakes for heat

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

Sauté Garlic: In the same pot, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant but not browned.

Add Tomatoes: Pour in the can of diced tomatoes (with juices) and stir well. Let it simmer for 3-4 minutes, allowing the flavors to meld.

Create the Creamy Sauce: Reduce heat to low, then stir in the heavy cream and Italian seasoning. Allow the sauce to heat through for about 2-3 minutes, stirring frequently.

Combine Pasta and Sauce: Add the cooked pasta to the sauce, mixing until well coated. If the sauce seems too thick, gradually add some reserved pasta water until you reach your desired consistency.

Season and Finish: Stir in chopped basil, grated Parmesan cheese, and salt and pepper to taste. If you enjoy a bit of spice, sprinkle in some crushed red pepper flakes.

Serve: Plate the creamy tomato basil pasta and garnish with additional basil and Parmesan if desired. Enjoy your quick and delicious meal!
