Creamy Tomato Basil Chicken Skillet

Ingredients
  

4 boneless skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes, drained

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional, for heat)

1 cup fresh basil leaves, chopped

1/2 cup grated Parmesan cheese

Cooked pasta, rice, or crusty bread for serving

Instructions
 

Prepare the Chicken: Season the chicken breasts on both sides with salt and pepper.

    Sear the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the chicken breasts and sear for about 5-7 minutes per side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, reduce the heat to medium. Add minced garlic and sauté for about 30 seconds until fragrant.

        Make the Sauce: Add the drained diced tomatoes to the skillet, followed by the heavy cream, oregano, onion powder, and red pepper flakes (if using). Stir to combine and cook for 2-3 minutes until the sauce is heated through.

          Add Cheese and Basil: Stir in the chopped basil and grated Parmesan cheese until melted and creamy.

            Return Chicken to Skillet: Place the seared chicken breasts back into the skillet, coating them with the creamy tomato sauce. Let simmer for an additional 3-5 minutes, allowing the chicken to soak up some of the flavor.

              Serve: Serve the creamy tomato basil chicken over cooked pasta or rice, or alongside crusty bread to soak up the sauce. Garnish with additional basil and Parmesan if desired.
