4 cups coconut milk

2 cups vegetable or chicken broth

1 tablespoon lime juice (freshly squeezed)

1 teaspoon sugar

1 cup mushrooms, sliced (shiitake or button)

1 cup bell peppers, thinly sliced (red and yellow for color)

1 cup snap peas or green beans, trimmed

1 cup cherry tomatoes, halved

Fresh cilantro leaves, for garnish
