4 tostada shells

1 cup sweet corn kernels (fresh, frozen, or canned)

1 ripe avocado, diced

1/2 cup Greek yogurt (or sour cream)

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Optional toppings: sliced radishes, cotija cheese, or hot sauce

Instructions
 

Prepare the Corn: If using fresh corn, bring a pot of water to a boil, then blanch the corn kernels for 2-3 minutes until tender. If using frozen, cook according to package instructions. Drain and set aside to cool.

    Make the Creamy Mixture: In a medium bowl, combine Greek yogurt, lime juice, garlic powder, cumin, salt, and pepper. Mix well until smooth.

      Combine Avocado and Corn: In a separate bowl, gently mash the diced avocado with a fork. Stir in the sweet corn, red onion, and half of the chopped cilantro. Season the mixture with salt and pepper to taste.

        Assemble the Tostadas: Spread a generous layer of the creamy yogurt mixture onto each tostada shell. Top with the corn and avocado mixture, distributing it evenly among the tostadas.
