Creamy Sun-Dried Tomato Orzo

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped (preferably in oil)

2 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free version)

1 cup fresh spinach (packed)

1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)

Salt and pepper to taste

Fresh basil, chopped, for garnish

Optional: red pepper flakes for a spicy kick

Cook the Orzo: In a large pot of boiling salted water, cook the orzo according to package instructions until al dente. Drain and set aside.

    Sauté Aromatics: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for an additional 2-3 minutes to allow the flavors to meld.

        Make it Creamy: Pour in the vegetable broth and bring to a simmer. Reduce heat, then stir in the heavy cream. Cook for about 5 minutes until heated through.

          Combine Ingredients: Add the cooked orzo into the pot, stirring well to combine. Cook for another 2-3 minutes, allowing the orzo to soak up the creamy sauce.

            Add Spinach & Cheese: Stir in the fresh spinach and grated Parmesan cheese until the spinach wilts and the cheese melts. Season with salt, pepper, and optional red pepper flakes according to taste.

              Serve: Remove from heat and garnish with chopped fresh basil. Serve warm, and enjoy this creamy delight!
