1 pound potato gnocchi (store-bought or homemade)

1 cup sun-dried tomatoes in oil, drained and chopped

2 tablespoons olive oil (from sun-dried tomatoes)

3 cloves garlic, minced

1 cup heavy cream

1 cup Parmesan cheese, grated

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

Extra Parmesan, for serving

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the top. This usually takes about 2-3 minutes. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil (reserved from the sun-dried tomatoes) over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but be careful not to let it burn.

      Add the Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and sauté for an additional 2-3 minutes, allowing the flavors to meld.

        Make the Cream Sauce: Pour in the heavy cream and bring it to a gentle simmer. Stir in the Italian seasoning, and allow the mixture to cook for about 5 minutes, stirring occasionally, until it thickens slightly.
