Creamy Spinach Mushroom Pasta

8 oz (225g) fettuccine or pasta of choice

2 tbsp olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (e.g., cremini or button)

5 oz (140g) fresh spinach, roughly chopped

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

1 tsp salt (or to taste)

1/2 tsp black pepper (or to taste)

1/4 tsp nutmeg (optional)

Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Add Mushrooms: Increase the heat to medium-high and add the sliced mushrooms. Cook for around 5-7 minutes until they have released their moisture and are golden brown.

        Incorporate Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

          Create the Sauce: Lower the heat to medium-low. Pour in the heavy cream and stir well. Gradually add the Parmesan cheese, mixing until melted and smooth. If the sauce is too thick, gradually add reserved pasta water until you reach the desired consistency.

            Season the Sauce: Add salt, black pepper, and nutmeg (if using). Taste and adjust seasoning as needed.

              Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing to coat with the creamy mushroom-spinach sauce. Let simmer for an additional 1-2 minutes to warm through.
