8 oz (225g) pasta of your choice (fettuccine or penne work great)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (cremini or button)

4 cups fresh spinach leaves, packed

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and golden, about 5-6 minutes.

      Add Spinach: Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and Italian seasoning.

        Make the Creamy Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Allow the mixture to simmer for 2-3 minutes until it starts to thicken. Add the grated Parmesan cheese and stir until melted and creamy.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat with the sauce. If the pasta seems dry, gradually add some reserved pasta water until you reach the desired creaminess.

            Finish and Serve: Stir in the lemon zest for a fresh kick. Taste and adjust seasoning if necessary. Serve immediately, garnishing with fresh parsley and additional Parmesan cheese if desired.
