Creamy Spinach and Mushroom Pasta

8 oz (225g) pasta (fettuccine or penne)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (button or cremini)

6 oz (170g) fresh spinach

1 cup (240ml) heavy cream

½ cup (50g) Parmesan cheese, grated (plus more for serving)

1 teaspoon Italian seasoning

Salt and pepper to taste

Crushed red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute, being careful not to burn it.

      Add Mushrooms: Increase the heat to medium-high and add the sliced mushrooms to the skillet. Cook for about 5-7 minutes until they are browned and have released their moisture.

        Incorporate Spinach: Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.

          Make the Sauce: Reduce the heat to medium and pour in the heavy cream. Stir well to combine and let it simmer for 2-3 minutes. Add the grated Parmesan cheese, Italian seasoning, salt, and pepper, stirring until the cheese melts and the sauce thickens. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
