8 oz (225 g) penne pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 (14 oz) can artichoke hearts, drained and chopped

4 cups fresh spinach, roughly chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup grated Parmesan cheese, divided

1 cup shredded mozzarella cheese, divided

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/2 cup breadcrumbs

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook for 2 minutes less than the package instructions for al dente. Drain and set aside.

      Sauté Garlic and Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped artichokes and fresh spinach, cooking until the spinach is wilted. Season with salt, pepper, and Italian seasoning, then remove from heat.

        Prepare the Creamy Mixture: In a large mixing bowl, combine the softened cream cheese, sour cream, half of the Parmesan cheese, and half of the mozzarella cheese. Mix until smooth and well combined.

          Combine Ingredients: Fold the sautéed spinach and artichoke mixture into the creamy mixture, then add the cooked penne pasta. Stir until everything is evenly coated.

            Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch (or equivalent size) baking dish, spreading it evenly.

              Add Toppings: Sprinkle the remaining mozzarella cheese and Parmesan cheese over the top, followed by the breadcrumbs for a crunchy finish.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.
