Ingredients

1 lb fresh shrimp, peeled and deveined

4 cups seafood stock (or vegetable broth)

1 cup heavy cream

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium potatoes, diced into small cubes

1 cup corn kernels (fresh or frozen)

1 bell pepper (red or green), diced

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spice preference)

Salt and black pepper to taste

Fresh parsley, chopped for garnish

Lemon wedges for serving

Instructions

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until they become soft and translucent, about 5 minutes. Stir in the minced garlic and sauté for an additional minute until fragrant.

Make the Base: Add the diced potatoes, seafood stock, thyme, smoked paprika, cayenne pepper, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.

Add Shrimp and Corn: Once the potatoes are cooked, add the shrimp and corn to the pot. Cook for another 5-7 minutes until the shrimp are pink and fully cooked through.

Create Creaminess: Reduce the heat to low and stir in the heavy cream. Allow the chowder to heat through but do not let it boil. Taste and adjust seasonings if needed.

Serve: Ladle the chowder into bowls, garnish with fresh parsley, and serve with lemon wedges on the side to brighten the flavors. Enjoy your creamy delight!
