Creamy Roasted Tomato Pasta

2 pounds ripe tomatoes, halved

3 tablespoons olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon balsamic vinegar

1 cup heavy cream

1 cup grated Parmesan cheese

1 pound pasta (fettuccine or penne works well)

Fresh basil leaves, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Roast Tomatoes: Place the halved tomatoes on a baking sheet. Drizzle 2 tablespoons of olive oil over them and season with salt, pepper, and dried oregano. Add the minced garlic. Roast in the preheated oven for about 25-30 minutes, or until the tomatoes are blistered and caramelized.

      Prepare Pasta: While the tomatoes are roasting, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

        Make the Creamy Sauce: In a large skillet over medium heat, add the roasted tomatoes (and any juices) and bring to a simmer. Stir in the balsamic vinegar and then pour in the heavy cream, mixing well. Allow it to cook for about 5 minutes until the sauce thickens slightly.

          Combine Ingredients: Gently fold the cooked pasta into the sauce, adding Parmesan cheese and enough reserved pasta water to create a creamy consistency. Toss everything together until well combined.

            Serve: Plate the pasta and top with additional grated Parmesan and fresh basil leaves for garnish. Drizzle with the remaining tablespoon of olive oil if desired.
