Creamy Roasted Tomato Bisque

2 pounds ripe tomatoes, halved

1 medium onion, chopped

4 cloves garlic, peeled

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon balsamic vinegar

1 teaspoon dried basil

1 teaspoon dried oregano

2 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

Fresh basil leaves for garnish

Optional: Red pepper flakes for a touch of heat

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tomatoes: Place the halved tomatoes, chopped onion, and garlic cloves on a large baking sheet. Drizzle with olive oil and sprinkle with salt, black pepper, balsamic vinegar, dried basil, and dried oregano. Toss everything together to coat evenly.

      Roast the Vegetables: Roast in the preheated oven for about 25-30 minutes, or until the tomatoes are caramelized and softened.

        Blend the Mixture: Once roasted, remove the baking sheet from the oven and let it cool slightly. Then, transfer the mixture to a blender or a large pot if using an immersion blender. Blend until smooth.

          Simmer the Bisque: Pour the blended mixture into a pot and add the vegetable broth. Stir to combine and bring to a gentle simmer over medium heat. Let it simmer for about 10 minutes to allow the flavors to meld.
