Creamy Roasted Red Pepper Pasta

12 oz pasta (fettuccine or your choice)

2 large red bell peppers

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh basil, for garnish

Optional: Extra grated Parmesan cheese, for serving

Instructions
 

Roast the Peppers: Preheat your oven to 450°F (230°C). Cut the red bell peppers in half and remove the seeds. Place them cut-side down on a baking sheet lined with parchment paper. Roast in the oven for about 20-25 minutes, or until the skins are blistered and charred. Remove from the oven and cover with foil to steam for 10 minutes. Once cool, peel off the skins and roughly chop the peppers.

    Cook the Pasta: While the peppers are roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Make the Sauce: In a large skillet or saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and red pepper flakes, cooking for another minute until fragrant.

        Blend the Peppers: In a blender, combine the roasted red peppers, sautéed onion and garlic, and heavy cream. Blend until smooth and creamy. If it's too thick, add a few tablespoons of the reserved pasta water to reach desired consistency.

          Combine Pasta and Sauce: Pour the red pepper sauce into the skillet with the onions and garlic, stirring to meld the flavors. Add in the cooked pasta and Parmesan cheese. Toss to coat the pasta evenly. If the sauce is too thick, add more reserved pasta water until the sauce is creamy and clings well to the pasta.

            Serve: Taste and adjust seasoning with salt and pepper. Serve the pasta hot, garnished with fresh basil and extra grated Parmesan cheese, if desired.
