Creamy Roasted Red Pepper Orzo

1 cup orzo pasta

2 large red bell peppers

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

2 cups vegetable broth

1 cup heavy cream

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

¼ cup grated Parmesan cheese

2 tablespoons fresh basil, chopped (for garnish)

Optional: Crushed red pepper flakes for a spicy kick

Instructions
 

Roast the Red Peppers: Preheat your oven to 450°F (232°C). Place the whole red bell peppers on a baking sheet and roast for about 20-25 minutes, turning occasionally, until the skins are charred. Remove from the oven and let cool. Once cooled, peel off the skins, remove the seeds, and chop the peppers into small pieces.

    Cook the Orzo: In a large pot, bring water to a boil and cook the orzo according to package instructions until al dente. Drain and set aside.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until softened. Add the minced garlic and cook for an additional minute, being careful not to burn it.

        Create the Sauce: Stir in the roasted red pepper pieces, smoked paprika, dried oregano, salt, and pepper. Pour in the vegetable broth and bring to a gentle simmer. Let it cook for about 5 minutes to allow the flavors to meld.

          Blend the Sauce: Transfer the mixture to a blender or use an immersion blender to purée until smooth. Return the blended sauce to the skillet.

            Add Cream and Cheese: Stir in the heavy cream and Parmesan cheese into the sauce. Let it simmer on low for another 3-5 minutes, stirring frequently until the sauce is thick and creamy.
