Creamy Roasted Garlic & Tomato Gnocchi

1 pound gnocchi (store-bought or homemade)

1 head of garlic

2 tablespoons olive oil

Salt and pepper to taste

1 pint cherry tomatoes, halved

1 cup heavy cream

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup freshly grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil. Roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized.

    Prepare the Tomatoes: On a baking sheet, toss the halved cherry tomatoes with the remaining tablespoon of olive oil, salt, and pepper. Roast alongside the garlic for about 20 minutes or until they are blistered and juicy.

      Cook the Gnocchi: While the tomatoes and garlic roast, bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions. They are done when they float to the surface. Drain and set aside, reserving a little pasta water.

        Make the Sauce: Once the garlic is cool enough to handle, squeeze the roasted cloves into a skillet, discarding the skin. Add the heavy cream and dried herbs to the skillet, stirring to combine. Heat over medium-low heat, letting it simmer gently for 5-7 minutes until the sauce thickens slightly.

          Combine Everything: Add the roasted tomatoes and cooked gnocchi to the skillet, tossing gently to coat in the creamy sauce. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency. Stir in the Parmesan cheese until melted and fully combined.
