Creamy Roasted Garlic Potato Soup

1 bulb of garlic

2 tablespoons olive oil

4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cups vegetable or chicken broth

1 cup heavy cream (or coconut milk for a vegan option)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh chives or parsley, for garnish

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with 1 tablespoon of olive oil, and wrap it in aluminum foil. Roast for 25-30 minutes, until tender and caramelized.

    Sauté Vegetables: In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Cook Potatoes: Add the diced potatoes to the pot, followed by the vegetable or chicken broth. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
