Creamy Potato Puffs with Cheese Delight

2 large russet potatoes, peeled and cubed

1 cup shredded cheese (cheddar or mozzarella)

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1/4 cup fresh chives, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup all-purpose flour

1 egg, beaten

Vegetable oil for frying

Boil the Potatoes: Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.

    Mash: In a large bowl, mash the potatoes until smooth. Add the cream cheese, shredded cheese, Parmesan cheese, chives, garlic powder, onion powder, salt, and pepper. Mix until well combined.

      Form Puffs: Take a small handful of the potato mixture and shape it into a ball (about 1-1.5 inches in diameter). Repeat until all the mixture is used.

        Prepare for Frying: In a shallow dish, place the flour. In another dish, add the beaten egg.

          Coat the Puffs: Roll each potato ball in flour, coat it in the beaten egg, and then roll it again in the flour to create a double layer.

            Fry: In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully place a few potato puffs in the oil, frying until golden brown on all sides, about 4-5 minutes.

              Drain: Use a slotted spoon to transfer the puffs to a paper towel-lined plate to drain excess oil.

                Serve: Serve hot with dipping sauce of your choice, and enjoy the delightful cheesy interior!
