Ingredients
  

1 lb ground beef (or ground turkey for a lighter option)

4 medium potatoes, peeled and diced

1 medium onion, chopped

3 carrots, diced

2 celery stalks, diced

4 cups beef broth

1 cup heavy cream

2 cups shredded cheddar cheese

3 cloves garlic, minced

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

1 bay leaf

Fresh parsley, chopped (for garnish)

Instructions
 

In a skillet over medium heat, brown the ground beef until fully cooked, breaking it up into small pieces. Drain excess fat and set aside.

    In the bottom of your crockpot, add the diced potatoes, onion, carrots, and celery.

      Pour in the beef broth and stir in the minced garlic, thyme, paprika, salt, and pepper. Add the bay leaf.

        Gently mix in the browned ground beef.

          Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the vegetables are tender.

            In the last 30 minutes of cooking, stir in the heavy cream and shredded cheddar cheese. Mix until the cheese is melted and the soup is creamy.

              Taste and adjust seasoning if needed. Remove the bay leaf before serving.

                Ladle the soup into bowls and garnish with fresh parsley.
