9 oz (250 g) fresh cheese tortellini (store-bought or homemade)

1 cup heavy cream

1 cup pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 tablespoon olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese, plus more for serving

Fresh basil leaves, for garnish

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions (usually around 3-5 minutes for fresh tortellini). Drain and set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Create the Creamy Base: Pour in the heavy cream and bring to a gentle simmer. Stir in the pesto and mix well until combined. Let it simmer for about 2-3 minutes to thicken slightly.
