Creamy Pesto Chicken Penne

12 oz penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

3 cloves garlic, minced

1 cup heavy cream

1/2 cup prepared basil pesto

1/4 cup grated Parmesan cheese, plus more for serving

1 cup cherry tomatoes, halved

1/2 cup fresh baby spinach

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta:

    - In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of the pasta water.

      Sauté the Chicken:

        - In a large skillet, heat olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook for about 6-7 minutes, or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the skillet and set aside.

          Prepare the Sauce:

            - In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.

              - Pour in the heavy cream and bring to a gentle simmer. Stir in the basil pesto and grated Parmesan cheese until well combined. If the sauce is too thick, gradually add the reserved pasta water until desired consistency is reached.

                Combine Ingredients:

                  - Return the cooked chicken to the skillet along with the cherry tomatoes and fresh spinach. Stir gently to combine and heat through for about 3-4 minutes.

                    Mix with Pasta:

                      - Add the drained penne pasta to the skillet, tossing everything together until the pasta is well coated with the creamy pesto sauce. Taste and adjust seasoning with more salt and pepper if needed.

                        Serve:

                          - Divide the creamy pesto chicken penne into bowls and garnish with additional Parmesan cheese and fresh basil leaves if desired. Serve immediately and enjoy your delicious meal!
