8 oz (about 225g) pasta of your choice (penne or fettuccine work well)

2 boneless, skinless chicken breasts

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup spinach, fresh

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain, reserving about 1/2 cup of pasta water, and set aside.

    Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 7-8 minutes per side, or until cooked through and golden brown. Remove from the skillet and let rest for 5 minutes, then slice into strips.

      Make the Creamy Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the basil pesto and mix until well combined.

        Combine Ingredients: Add the cooked pasta, cherry tomatoes, and spinach to the skillet with the creamy pesto sauce. Toss everything together until well coated. If the sauce is too thick, add reserved pasta water a little at a time to achieve your desired consistency.
