1 lb Italian sausage (sweet or spicy, casing removed)

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional)

6 cups chicken broth

1 (15 oz) can diced tomatoes (with juices)

1 cup ditalini pasta

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Brown the Sausage: In a large pot or Dutch oven, heat over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

    Sauté Vegetables: Add the diced onion, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables begin to soften. Stir in the minced garlic, oregano, thyme, and red pepper flakes (if using). Cook for an additional minute until fragrant.
