1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for a kick)

4 cups chicken broth

12 oz (340g) fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Chicken: In a large pot over medium heat, add the olive oil. Once hot, add the chicken pieces, season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, until the chicken is browned and no longer pink. Remove the chicken from the pot and set aside.

    Sauté Garlic: In the same pot, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

      Add Broth and Pasta: Pour in the chicken broth and bring to a boil. Once boiling, add the fettuccine pasta. Stir well and bring back to a simmer. Cook for 8-10 minutes, stirring occasionally, until the pasta is al dente.

        Add Broccoli: During the last 3-4 minutes of pasta cooking, add the broccoli florets to the pot. Cook until they are bright green and tender but still crisp.

          Make It Creamy: Reduce the heat to low, and stir in the heavy cream, cooked chicken, and grated Parmesan cheese. Mix well until the cheese has melted and the sauce is creamy. Adjust seasoning with additional salt and pepper to taste.

            Serve: Remove from heat and let it stand for a couple of minutes to thicken. Garnish with freshly chopped parsley before serving.
