Creamy Mushroom Spinach Pasta

8 oz (225g) pasta of your choice (fettuccine or penne recommended)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (cremini or button mushrooms work well)

3 cups fresh spinach leaves, packed

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta. Set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-5 minutes. Add the minced garlic and sauté for another 1 minute until fragrant.

      Add the Mushrooms: Stir in the sliced mushrooms and cook until they are golden brown and have released their moisture, about 5-7 minutes.

        Incorporate Spinach: Add the fresh spinach leaves to the skillet and cook until wilted, about 2-3 minutes.

          Create the Cream Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Bring the mixture to a gentle simmer. Add the Parmesan cheese, salt, pepper, and red pepper flakes, if using. Stir until the cheese has melted and the sauce is creamy.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet along with a splash of the reserved pasta water to help combine the sauce. Toss until the pasta is evenly coated with the creamy mushroom spinach sauce.
