Ingredients

1 lb (450g) potato gnocchi

2 cups mushrooms (cremini or button), sliced

4 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

2 tablespoons unsalted butter

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Gnocchi: In a large pot, bring salted water to a boil. Add the potato gnocchi and cook according to package instructions until they float to the surface (typically 2-3 minutes). Drain and set aside.

Sauté the Mushrooms: In a large skillet over medium heat, add the olive oil and butter. Once the butter has melted, add the sliced mushrooms and sauté for about 5-7 minutes until they are golden brown and tender.

Add Garlic and Herbs: Stir in the minced garlic and dried thyme. Cook for an additional 1-2 minutes, allowing the garlic to become fragrant but not browned.

Create the Sauce: Pour in the vegetable broth and bring to a gentle simmer. Allow it to cook for about 3-4 minutes to reduce slightly. Then, stir in the heavy cream and mix well. Let the sauce simmer for another 2-3 minutes until it thickens slightly.

Combine Gnocchi and Sauce: Add the cooked gnocchi to the skillet, gently tossing until well coated in the creamy mushroom sauce. Stir in the grated Parmesan cheese, and season with salt and pepper to taste. Allow everything to warm through for another 1-2 minutes.

Serve: Plate the creamy mushroom garlic gnocchi, garnishing with freshly chopped parsley and an extra sprinkle of Parmesan cheese if desired. Enjoy your delectable dish!
