1 pound potato gnocchi

2 cups fresh spinach, chopped

1 tablespoon olive oil

3 cloves garlic, minced

1 cup heavy cream

1 tablespoon lemon juice

Zest of 1 lemon

½ cup grated Parmesan cheese

Salt and pepper to taste

Pinch of nutmeg (optional)

Fresh basil leaves for garnish

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to package instructions until they float to the top, typically around 2-3 minutes. Drain and set aside.

    Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes.

      Create the Creamy Sauce: Lower the heat to medium-low and pour in the heavy cream. Stir well, allowing it to heat through. Add the lemon juice, lemon zest, and grated Parmesan cheese, stirring until the cheese melts and the sauce becomes smooth.

        Combine Gnocchi and Sauce: Gently add the cooked gnocchi to the skillet with the creamy spinach sauce. Toss together to coat the gnocchi evenly. Season with salt, pepper, and a pinch of nutmeg if desired.
