Ingredients

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach

1 cup vegetable or chicken broth

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Cook the Orzo: In a medium saucepan, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, or until fragrant and golden.

Add Spinach: Stir in the fresh spinach and cook for 2-3 minutes, until wilted.

Combine Broth and Cream: Pour in the vegetable or chicken broth and bring to a simmer. Once simmering, lower the heat and add the heavy cream, lemon zest, and lemon juice. Stir to combine.

Incorporate Orzo: Add the cooked orzo to the skillet and toss to coat in the creamy sauce. Cook for an additional 2-3 minutes, allowing the orzo to absorb some of the sauce.

Finish with Cheese: Stir in the grated Parmesan cheese until melted and creamy. Season with salt and black pepper to taste.

Serve: Remove from heat and serve hot, garnished with fresh basil leaves, if desired.
