Ingredients

1 cup orzo pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 cup vegetable broth (or chicken broth for a non-vegetarian option)

1 cup heavy cream

Zest of 1 large lemon

Juice of 1 large lemon

1/2 cup grated Parmesan cheese (plus extra for serving)

Salt, to taste

Black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Orzo: In a medium pot, bring salted water to a boil. Add the orzo and cook according to the package instructions until al dente. Drain the orzo and set aside.

Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant and lightly golden. Be careful not to let it burn!

Add Broth and Cream: Pour in the vegetable or chicken broth and bring to a simmer. Then, slowly whisk in the heavy cream, stirring to combine.

Flavor the Sauce: Add the lemon zest and lemon juice to the skillet. Stir well and let the mixture simmer for about 3-5 minutes, allowing it to thicken slightly.

Combine Orzo: Once the sauce is thickened, add the cooked orzo to the skillet. Mix gently to ensure the orzo is fully coated with the creamy lemon garlic sauce.

Add Cheese: Stir in the grated Parmesan cheese, mixing until it is melted and well incorporated into the sauce. Season with salt and black pepper to taste.

Garnish and Serve: Once the orzo is creamy and flavorful, remove the skillet from the heat. Serve immediately, garnished with fresh parsley and extra Parmesan cheese, if desired.
