1 cup orzo pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup vegetable or chicken broth

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

1 cup spinach, chopped

1/2 cup parmesan cheese, grated

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Orzo: In a medium-sized pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.
