2 boneless, skinless chicken breasts

2 medium zucchinis, spiralized into noodles

1 tablespoon olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 lemon, zested and juiced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup grated Parmesan cheese (plus extra for serving)

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken breasts with salt, pepper, and oregano.

    Cook the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the seasoned chicken breasts. Cook for about 6-7 minutes per side, or until fully cooked (internal temperature of 165°F). Remove from skillet and let rest for 5 minutes. Slice into strips.

      Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn it.

        Make the Sauce: Pour in the chicken broth and scrape any browned bits from the pan. Allow it to simmer for 2-3 minutes. Then, stir in the heavy cream, lemon zest, and lemon juice. Bring to a gentle simmer.

          Combine and Thicken: Add the grated Parmesan cheese to the sauce. Stir until melted and smooth. Let the sauce thicken for about 3-5 minutes, stirring occasionally.

            Add Zucchini Noodles: Gently fold the spiralized zucchini noodles into the creamy sauce. Cook for about 2-3 minutes until the noodles are tender but still firm, allowing them to soak up some of the sauce.
