Creamy Lemon Dill Pasta with Salmon

8 oz (225g) spaghetti or fettuccine

2 tablespoons olive oil

2 cloves garlic, minced

1 pound (450g) salmon fillets, skinless and boneless

Salt and pepper to taste

1 cup heavy cream

Zest of 1 lemon

2 tablespoons fresh lemon juice

1/4 cup fresh dill, chopped (plus extra for garnish)

1/2 cup grated Parmesan cheese

Cherry tomatoes, halved (for optional garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or fettuccine according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Salmon: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper. Add them to the skillet skin-side down (if using skin), and cook for about 4-5 minutes on each side or until cooked through and flaky. Remove from skillet and set aside.

      Make the Creamy Sauce: In the same skillet, reduce heat to low and add the minced garlic. Sauté for about 1 minute until fragrant, but not browned. Add the heavy cream, lemon zest, lemon juice, and freshly chopped dill. Stir well and allow it to simmer for 2-3 minutes.

        Combine: Gradually stir in the grated Parmesan cheese until the sauce is smooth. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

          Toss with Pasta: Add the cooked pasta to the skillet, tossing gently to coat the noodles in the creamy sauce. Flake the cooked salmon into pieces and fold it into the pasta, being careful not to break it up too much.

            Garnish and Serve: Plate the creamy lemon dill pasta and garnish with extra chopped dill and halved cherry tomatoes for a pop of color. Serve with lemon wedges on the side for an extra zesty kick.
