2 chicken breasts, boneless and skinless

1 cup fresh spinach leaves

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1/4 cup unsalted butter, melted

2 tablespoons fresh lemon juice

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

1 package of puff pastry (2 sheets), thawed if frozen

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Using a sharp knife, butterfly the chicken breasts by slicing them horizontally without cutting all the way through. You want to open them like a book. Tenderize the chicken slightly with a meat mallet for even cooking.
