Ingredients

4 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 cup chicken broth

1 cup heavy cream

1 cup fresh spinach, chopped

½ cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Season the chicken breasts generously with salt and black pepper on both sides.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté the Garlic: In the same skillet, add the minced garlic, thyme, and oregano. Sauté for about 1 minute until fragrant, taking care not to burn the garlic.

Make the Creamy Sauce: Pour the chicken broth into the skillet, scraping any browned bits off the bottom. Bring to a simmer and let it reduce for about 3 minutes. Then, lower the heat and stir in the heavy cream.

Add Cheese and Spinach: Stir in the grated Parmesan cheese until melted and combined. Add the chopped spinach and cook for an additional 2-3 minutes until the spinach wilts.

Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, spooning the creamy sauce over them. Let it simmer for another 2-3 minutes to heat the chicken through.

Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve immediately over rice, pasta, or with crusty bread to soak up the delicious sauce.
