8 oz elbow macaroni

2 tbsp unsalted butter

2 tbsp all-purpose flour

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1 cup roasted Hatch green chiles, diced (fresh or canned)

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and black pepper, to taste

1/2 cup panko breadcrumbs (optional for topping)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce:

        - In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1-2 minutes, until bubbly and lightly golden.

          - Gradually whisk in the whole milk, ensuring no lumps form. Continue to cook and stir until the mixture thickens (about 4-5 minutes).

            Add the Cheeses:

              - Lower the heat to medium-low and stir in the sharp cheddar and pepper jack cheeses until melted and smooth.

                Season the Sauce:
